Behold- a delicious tri tip dip sandwich! Born out of pure desperation. There’s something about summer that zaps all of my meal prepping and cooking mojo. The thought of heating up the house anymore is enough to deter me from making dinner. But the problem still remains- everyone is still hungry.
To top it off, our oven is broken and still a few weeks out from repair. The timing is definitely ideal for it to break, but it’s got me leaning on my InstaPot/slow cooker and air fryer even more. I tweaked one of our favorite marinades recipes a bit and created these slow cooker tri tip dip sandwiches and they did not disappoint! The ingredients give it a unique Asian flavor.
Depending on where you live, tri tip might be called different things. I know on the East Coast it’s known as brisket, and Santa Maria in the Midwest. Honestly, any cut of beef would work for this, so if you’re having trouble finding it don’t stress.
Slow Cooker Tri Tip Dip Sandwich
The perfect tri tip sandwich
Ingredients
- 2 pounds Tri Tip
- 1 cups soy sauce (reduced sodium recommended)
- 1/2 cup beef broth
- 2 cloves minced garlic
- 1 tsp ginger (fresh recommended, but dried works just fine too)
- 1 tsp sesame oil
- Juice of 1 lime
- 1 onion, chopped and sautéed
- Cheese (I recommend gruyere or pepper jack, but whatever is on hand will work!)
- Ciabatta rolls
Instructions
- Combine soy sauce, garlic, ginger, sesame oil, and lime juice in a separate bowl. Whisk together.
- Put tri tip in the crock pot and pour the rest of the ingredients over the meat. Set on low for about 6 hours. Time will vary depending on slow cooker. I cooked mine in an InstaPot, but I used the slow cook setting. It can be done in a pressure cooker, but I like prefer beef cooked in the slow cooker than in the pressure cooker.
- When you are ready to serve, chop the onion and sauté in olive oil on low heat. If you want to get really fancy, you can add a little beef broth and Worcestershire sauce to caramelize them.
- Either shred or slice the tri tip and top your sandwich with cheese and onions on the ciabatta roll.
- Take a little of the broth left over in the crock pot and use it for dipping. If you find the broth to be too salty, add a little more broth to taste.
Notes
This can also be prepared on the grill. Marinade the tri tip in the soy sauce mixture as long as possible, then grill your tri tip. The grilled flavor just feels like summer!
While this sandwich is incredible, the tri tip is also perfect on it's own, should you want a low carb option.
How to Make Tri Tip Dip Sandwiches

This asian inspired tri tip dip sandwich is the perfect summer meal! You can throw it in the slow cooker in the morning, which frees you up to take advantage of the long summer afternoons. Plus, it should leave you with enough leftovers for a few days. I served it with fruit, but a small salad or chips would be a great pairing too.
