Halloween will probably look a little different this year, which is going to be hard after a whole year of everything looking different. But you know what makes everything better? Cheese. Which is exactly what lead me to think up this baked brie pumpkin. Baked brie is one of my most favorite appetizers. It’s so easy to make and it always tastes delicious.
I’ve been trying to brainstorm ways I can make our ordinary things feel more festive and spooky to make this Halloween even more special. We haven’t finalized our plans, but it’s a pretty safe bet that whatever we decide will look different in some way than years before. And I want my kids to know that that is okay. Different doesn’t have to mean bad, and it doesn’t have to mean you throw caution to the wind and do whatever you want just because you want to. It’s an opportunity to be creative and have fun in a unique way. So I’m already getting started brainstorming all of the jack-o-lantern, ghost, mummy, and pumpkin themed foods I can to add to our celebration this year.
Now, if your kids are anything like mine, they wouldn’t touch this with a 10 foot pole. Even though I know they would love melted cheese wrapped in dough, because who doesn’t. But, you know what? That’s okay, because then there’s more for me. Adults are allowed to have fun too, and in 2020 my definition of fun is eating baked brie until I give myself a stomachache. I live on the edge.
Baked Brie Pumpkin Ingredients
- Puff pastry
- A wheel of brie
- Peach preserves
- Brown sugar
Tips for Making the Baked Brie Pumpkin
- Puff pastry is usually pretty sticky. I used a pointy knife to cut out the face of my jack-o-lantern. You may not get the sharpest lines, but the dough is very forgiving. If it doesn’t cute exactly as you want it, you should be able to form it how you want.
- Typically I would layer the preserves and brown sugar on the top of the brie, but I put it on the bottom to keep the jack-o-lantern face intact.
- Don’t remove the rind of the cheese. This will also help keep the cheese intact and from oozing out the eyeballs. Unless that’s the creepy look you’re going for.
- A baked brie can get a little messy in the oven, so I like to cook it on a nonstick silicone mat. (affiliate link)
- When you flip it over, it will slide around a bit. You can see my jack-o-lantern has a bit of a growth on the right side where the dough stretched out a bit. It’s okay! Pumpkins are never perfect, and it turns out baked brie pumpkins are no different!
Baked Brie Jack-O-Lantern
Why should the kids get all the fun? This baked brie jack-o-lantern is the perfect Halloween appetizer!
Ingredients
- Puff pastry
- A wheel of brie
- Peach preserves
- Brown sugar
Instructions
- Lay the puff pastry out on a non stick silicone baking mat. Using a sharp knife, cut out the desired jack-o-lantern face.
- Place the wheel of brie, centering it over the face.
- Spread peach preserves on top of the cheese. I typically do about 3 tablespoons, but you can do as much or as little as you like.
- Sprinkle brown sugar on top of the preserves. I typically do about 1 tablespoon, but just like with the preserves, there is no right answer!
- Carefully fold the puff pastry around the cheese, preserves, and brown sugar. Flip it over so that the folds are on the bottom. It may slide around slightly, but pumpkins are never perfect!
- Gently pull the dough at the top of the jack-o-lantern to form a stem, if desired.
