Mom win of the week: Everyone was healthy! After 2 solid weeks of sicknesses/fevers/crap, everyone has been healthy and happy and it’s a huge sigh of relief. Now I’m going to go knock on all the wood.
Mom fail of the week: My kids have had so much screen time this week. Between being stuck inside because of the rain and trying to get caught up on so much work, I’m doing a crappy job of balancing it all.

Listening to: The Fall Line. You all know I love a true crime podcast. This one has been especially amazing because it focuses on communities who, historically, have been marginalized, and who do not generally receive significant media coverage or exposure. So good, check it out!
Watching: Tyler and I just got done rewatching Breaking Bad. It has been about five years since we watched the first time and there is soooo much I didn’t remember. Such a good show.
Wearing: Nothing but workout clothes lately… I’m such a walking stereotype. I did find this Adidas tank on Amazon for under $15!
Planning: A big kids seventh birthday party! How the heck am I going to have a SEVEN year old?!
Meal Plan: Heather and I plan meals very similarly. I automatically rebel against a meal if it’s “scheduled” on a certain day so I have very loose “plans” but shop for 3-4 meals and make what sounds good that day. I usually do leftovers for breakfast and lunch. I’m sure I’ve said this before but my favorite breakfast “hack” is leftovers with two fried eggs on top. Super easy and delicious. But back to dinner– I try to prepare two full meals on Sundays–usually things that that I can pop in to the oven during the week. And then two other, easier meals that can be thrown together on a busy weeknight.
- Sausage stuffed zucchini boats
- Loaded cauliflower mash bake
- Baked salmon cakes: No real recipe for these. I used salmon, flour, Old Bay seasoning, eggs, chopped bell pepper, capers, celery, red onion, parsley, fresh lemon. I think I might try this Avocado Cilantro Dressing to dip them in, too.
- Cheeseburger Soup: Funny story about this. I have a subscription for fresh, organic produce and this week I got purple carrots in my box. So I used them in this soup and it turned the soup bright purple 😂 It didn’t look appetizing but still tasted delish.

Girl you know I love me some true crime. I’m gonna have to listen to that podcast. Have you listened to Dirty John? Bravo made it into a tv miniseries as well. Soooo good!
