What I love most about these Pork Chops with White Wine Herb Dijon Sauce is that they take less than 30 minutes to cook, but they taste like a Sunday dinner you spent all day preparing. The White Wine Herb Sauce really feels so fancy for a weeknight meal, but it truly takes no time at all. I typically have all the ingredients on hand, so it’s just a matter of adding the Coleman Natural Pork Chops to the grocery list. Pork is a great source of lean protein, so it helps me stay on track with my nutrition goals, and it pairs well with whatever vegetables I have on hand for a side dish to make a complete meal.
This pork chop recipe is also dairy free and gluten free. This dish can even be paleo and keto friendly if you substitute the white wine for a chicken stock, and double check your Dijon mustard is compliant. Talk about versatile!
ingredients
- 4 Coleman Natural Pork Chops– I chose boneless, but use bone-in if you prefer
- 1 teaspoon extra virgin olive oil
- 3 tablespoons chopped onion
- 3/4 cup dry white wine, like a Sauvignon Blanc
- 1 tablespoon Dijon mustard
- 2 tablespoons chopped fresh herbs (I used parsley, rosemary, chives), or dried Italian seasoning
- Salt and pepper to taste

- In a large skillet, heat the olive oil over low-medium heat, and season the pork to taste with salt and pepper.
- Once the skillet is warm, add the pork and saute for 6-8 minutes. Then flip the pork chops, and brown for another 6-8 minutes on the other side. Once cooked, remove the pork chops and keep in a warm spot. I like to stick them inside the microwave.
- Add onions to the pan, and let simmer until translucent, about 3 minutes. Leave what remains in the pan from browning the pork chops!
- When the onions are soft, add the wine to the pan. Let it boil and reduce until you have about 1/2 cup left. Stir occasionally to scrape the brown bits off the side of the pan.
- Add the mustard, herbs, and pepper.
- Pour the Dijon herb sauce over the pork chops and enjoy!
I paired my pork chops with a summer squash and zucchini mixture, and some brown rice. Look at that sauce! You will knock your family’s socks off with this!
