Spring is just around the corner which means Easter feasts and impromptu gatherings! It seems like this time of year is full of spur of the moment dinners with friends just because the weather is warm. In California, Spring means beautiful, warm days sandwiched between days of rain, so when it’s nice out we like to be outside as much as possible and not in the kitchen cooking. Pearls® Specialty Olives are the perfect thing to keep on hand to impress your guests without having to work too hard.
We’ve come up with a salad to complement an Easter Brunch or impromptu backyard barbecue. The ingredients are simple, fresh and easy to keep on hand for that sunny day just around the corner. We teamed up with Pearls® Specialty to create this unique recipe because Life Is Better With Pearls®!
I have to be honest and say that I am not an olive eater, but my entire family is. We go through an obscene amount of olives in our house and Pearls® Specialties are definitely going to be added to the rotation. If everyone is eating and is happy, then I’m more than happy to serve something outside of my own personal tastes! You can even find them on Amazon, which is convenient for me since 95% of my life is purchased via Amazon.

The amount of ingredients used can vary depending on the taste of your guests. For reference, I used a whole bag of pre-washed baby spinach and a few handfuls of each topping.
So here is your perfect springtime side dish! Easily transported to a potluck, quickly pulled together for an impromptu get together or served along side your holiday feast, this salad is sure to please a crowd.
Pearls® Specialty Olives would be a great addition to a cheese board too (which you know we love)! They are the perfect size for snacking and would compliment any hors d’oeuvres at your next function!
